For Elliot's birthday he wanted to go to Vala's pumpkin patch. So this weekend we went together and had a lot of fun! I loved taking pictures of the squash they are so pretty against the old wood and fall leaves. :)
3/4 cup unsalted butter (i used slated and they turned out just fine)
2/3 cup sugar, plus more for rolling
1 large egg
1 teaspoon pure vanilla extract
1/3 cup red berry jam
1. Heat oven to 350 degrees. Line baking sheets with parchment paper (optional, I didn't even use non-stick spray or parchment paper).
2. Whisk flour, baking powder, and salt together in a bowl. In another bowl whip butter and sugar with an electric mixer until fluffy. Beat in egg and pure vanilla extract until just combined. Slowly beat in dry ingredients, in 2 additions, mixing just until incorporated.
3. Scoop dough into 1 inch balls; roll in sugar. Place about 2 inches apart on baking sheets. Press a 1/2 inch deep thumbprint into the center of each ball. Fill the thumbprint with jelly.
4. Bake cookies until edges are golden about 15 minutes. Cool. Serve.
This year, I played lightning volley ball with my good friends! I've had a lot of fun, especially because we are undefeated!!! Thank you Marty for being the BEST coach ever. :)
This month at church we are preparing the Communion. Our church has a two very cool machines for filling the cups with juice and filling the trays with cups. We had a lot of fun working together.
